Well, to be exact it is:

terrine de boudin noir béarnais rôti
- blood sausage terrine, sweet apple and cinnamon salsa


This where things got really good. I saw a father-young daughter couple enjoying this dish next to me ( BTW, good luck having a child in the US eat a blood sausage - forget kids, most grown-ups wouldn't do it either!); I asked for one as well...

Oh, my Heavens!!! It was lights out good - a bite to remember... I have no idea how that terrine was made, but it was smooth and silky inside and exceptionally well seasoned - not quite with quatre épices, albeit similar and milder. Terrine was slightly charred outside, but not burned into oblivion - more like seared just right. Salsa was served on the side - pleasant combination of slightly roasted apples and cinnamon.

This is easily one of the best bites of 2012, and I can say that only a month into the season.
